Distinctive Summer Soirées
Throughout the summer season, the Château gardens will come to life with Les Estivales, a festive evening series featuring live music, gourmet delights and an unforgettable ambiance.
Château Saint-Martin & Spa presents Les Estivales soirées on the following dates: Thursday, June 12; Saturday, June 21; and Thursdays July 3, July 17, July 31, August 14 and August 28.
In the enchanting setting, guests will enjoy a lavish buffet of Mediterranean flavours curated by Executive Chef Jean-Luc Lefrançois. The best of the traditional French market will be showcased, from open-fire grilled specialties to artisan cheeses; seasonal fresh vegetables and fruits; and local Mediterranean dishes — finished with exquisite desserts by the hotel’s pastry chef, Tanya Colella.
The lively atmosphere will be brought to life by the musical talents of the Chris Cadillac Strolling Band, known for their magnetic, high-energy performances.

Counting more than a decade at the helm, Executive Chef Jean-Luc Lefrançois brings an unquenchable passion to the Château’s culinary offerings. With reverence for local ingredients and regional culinary traditions, the chef crafts dishes marked by bold, authentic flavours.
The Château offers two distinct dining experiences. The elegant Le Saint-Martin, with its panoramic terrace, presents refined French gastronomy, whilst at L’Oliveraie, nestled in the hotel gardens, Mediterranean flavours express themselves beneath the trees.
Between rejuvenating treatments at Spa Saint-Martin by La Prairie, strolls through olive groves and cultural excursions to neighbouring villages, the 2025 season is a celebration of life’s simple, yet enduring, pleasures.
