This year, MGallery Collection goes beyond and invites guests to experience the bar as a destination. In collaboration with Michelin-starred chef Pichaya “Pam” Soontornyanakij, the boutique hotel collection unveils an immersive pairing concept that transforms an evening drink into a curated gastronomic ritual.

Following a training and exchange session with Chef Pam in Hong Kong in February 2026, the following six hotels in Asia will present a refined pairing of light bites and fresh cocktails, designed to be enjoyed in moments of connection — whether with a loved one or someone new:

Chef Pam, founder of Bangkok’s Michelin-starred Potong, stands among the most influential voices in contemporary gastronomy. Named The World’s Best Female Chef 2025 and Asia’s Best Female Chef 2024, she is celebrated for a culinary philosophy rooted in contrast, balance and storytelling, where flavour becomes memory and texture becomes emotion.

Her approach aligns seamlessly with MGallery Collection’s commitment to craftsmanship and meaningful luxury – where every experience is designed to evoke emotion and reveal the soul of a destination. Created for the rhythm of the bar, effortless to share and instinctively paired with a sip, the bites are bold yet balanced, familiar yet unexpected. Each unfolds in layers, playing with temperature, texture and contrast rather than a single note. A curated cocktail collection is served alongside Chef Pam’s five globally inspired bites, creating a fully immersive gastronomic encounter:

  • Caviar-Crowned Tartare is served with the Prohibition Martini
  • Tender Temptation Wings is paired with The Botanist’s Waltz
  • Sun-Kissed Crab with the Midnight Fizz Society
  • Truffle Shuffle Polenta alongside the Cult of Verde
  • Squid’s Midnight Dip with the Archive of Tomorrow

A Global Signature Served With Local Roots

Alongside the five signature bites, Chef Pam has developed a series of interpretations inspired by local ingredients and cultural influences.

In Thailand and the Maldives, additional bites include Shrimp Garden Toast and Air & Fire Corn. In Mainland China and Hong Kong, guests can enjoy Fiery Mantou Bun and Soy-Dipped Purple Fries. In Japan and South Korea, offerings include Tofu & Apple Eclipse and Sea Breeze Tartare. The classics of the Sunset Botanica and Tropic Mirage are paired with these local bites.

Every element is intentional. Each bite is crafted to enhance the drink beside it, amplifying botanical notes, cutting through sweetness or echoing spice to create a seamless exchange between glass and plate. Bite-sized yet rich in character, these are not bar snacks. They are sensory accents designed to linger in memory and transform an evening drink into a curated experience.

Participating Properties

World Cocktail Month 2026 will come to life across 16 selected MGallery Collection properties – spanning Europe, Australia, the Americas, the Middle East and Asia – of the over 127 boutique hotels part of the portfolio. From heritage city landmarks to coastal sanctuaries and design-led urban retreats, each property offers its own distinctive setting, united by a shared celebration of flavour, creativity and elevated mixology.

Chef Pam’s bites will be available year-round from 13 May 2026, while the 2026 World Cocktail Month cocktails will be available for three months.
